The best part about this recipe is that it uses the part of the feijoa usually discarded – the skins! You'll need to make it a few days ahead of time for best results. 

You will need:

  • Feijoa skins
  • A large clean container 
  • Water 
  • 3 - 4 tbsp white sugar 

To make:

  1. Fill the container with feijoa skins, add half the sugar then cover with water 
  2. Press the fruit down (you might need a weight) ensuring they're completely covered. It's important the fruit isn't exposed to air while its fermenting.
  3. Cover the container with a tea towel and leave on your kitchen bench for 2 - 3 days. 
  4. Strain the liquid into a bottle or jar, then stir in the remaining sugar. 
  5. Seal tightly with a lid & refridgerate for another day. 

Serving suggestions:

  • Serve in a tall glass with ice & a splash of vodka or gin. Add a squeeze of lime & soda water to taste.
  • Add a couple of tablespoons of the liquid in a flute, Top with prosecco or sparkling wine.
  • In a shaker, add vodka & elderflower liqueur with ice and shake well. Strain into a martini glass, top with Feijoa Fizz & garnish with an apple slice.
